Shangri-La Sydney is looking for a talented and passionate Chef de Partie (Pastry) to join our dynamic culinary team. This is an exciting opportunity to showcase your creativity and technical skills while working in one of Sydney’s most iconic hotels.
This role supports pastry production across the hotel and includes service for Altitude Restaurant, our signature dining venue. As such, the position involves à la carte service with an expectation of evening shifts to support restaurant operations.
About the role:
Demonstrate strong skills in yeast products and laminated doughs, including breads, croissants and Danish pastries.
Confidently work with chocolate techniques including tempering, bonbons, jellies, fruit preparations and petits fours.
Participate in the preparation, cooking and presentation of pastry items for the hotel’s outlets, including Altitude Restaurant’s à la carte service.
Support the day-to-day operations of the Pastry Kitchen in the absence of the Head Pastry Chef or Sous Chef.
Contribute to reviewing existing menus and assist with the development of new desserts and pastry concepts.
Ensure all food preparation follows Shangri-La’s Food Safety Management and HACCP standards, while maintaining proper use and care of kitchen equipment and utensils.
About you:
Certificate III in Commercial Cookery (or international equivalent) is required.
A valid Food Safety Certificate.
